German “Chocolateless” Cake

GERMAN “CHOCOLATELESS” CAKE
 
2 1/4 cup ground pecans * (see below)
3 eggs
1 1/2 tsp. cinnamon
1/2 stick butter
3 Tbls honey
1/2 tsp vanilla
2 tsp baking soda
3/4 tsp salt
 
Mix all ingredients together for cake.  Bake at 350 degrees for 15 to 20 minutes depending on size pan you use. You can find small
cake pans and use 2 to make it more festive.
 
 
ICING
 2 tsp vanilla
1 cup loosley chopped pecans
1 cup unsweetened coconut flakes
2 tsp cinnamon
1 tsp almond extract
1/2 cup honey
1/2 cup coconut oil
 
Mix together, spread on top of cake (and between if using layers).
 
*ground pecans –  grind pecans in food processor into flour.  It would be different if you used almond flour and it is not recommended.  The color of the pecans makes it look just like a German Chocolate Cake.  Grinding the pecans into the flour is very easy, because the pecans are soft.  Then for the icing you only chop pecans into small pieces.
