NEED YOUR HELP MOMS!!! Austin’s Birthday is this Saturday!

Has anyone found any good recipes for a birthday cake recipe?  I tried one recently that I was hopeful about, but it didn’t turn out too good.  Jennifer’s son, Austin, is turning 15 this Saturday.  Please comment asap so we can help Jennifer make this a special day for Austin!  Thanks!

I know we are all busy!  And we all have our daily challenges with this disease and this diet.  But if you can all take a few minutes to pray for Jennifer and Austin.  Austin has been trying new medications to try to add some weight and the drugs are not agreeing with him.  The doctor is considering admitting him into the hospital to give him some IV to boost him up.  Please pray for Austin’s appetite and weight to climb.  And pray for Jennifer, we all know as mom’s this is hard for us as well.

  1. Jennifer and Austin, my prayers are with you both. Happy Birthday Austin. I have not made a cake that is scd legal, but did find a coconut cake recipe in Eat Well Feel Well cookbook. I have to leave now for an appt, but if you would like it I can email to Paige this afternoon. Please let me know.

I can not wait to try the German Chocolateless cake! We usually do a chocolate with chocolate icing cake for family gatherings so this will be perfect to have SCD legal cake to substitute, keeping with family tradition!!
      I just got the Eat Well, Feel Well cookbook on Sunday… made the Beef Jerky… it was pretty tasty! I am so distracted I did not think to check it for a cake recipe! I do not have the Lucy cookbook…yet it is on my list to purchase next…. so in mean time please share the cake and icing recipes, Austin’s favorite color is orange! So maybe he is suppose to have 2 cakes this year, bring on the calories! We live in Columbus, GA (2 hours south of Atlanta) but we come to Atlanta for treatment and care. We have only done outpatient care up to this point and if Austin has his way (desire)it will remain that way! But we will do whatever it takes to get him on the up swing. Blessing to all of you! (PS…Don’t mean to be a prayer hog…he is so looking forward to driving….but please pray for us as we ride with a new driver this Saturday…LOL!)

  2. Hi! So sorry to hear of this struggle. I know it is frightening and frustrating. I don’t know what Austin’s issues are but I have just subscribed to a newsletter from and also bought the e-book as Lauren needed to back up a little and sort of do a hybrid of the intro diet and a phased in approach to food.     We know this is a sensitive subject, but we think it is one that needs to be talked about.

    How is your weight doing?

    Are you struggling to gain weight and worried you’re wasting away?

    First, we want you to know that you are not alone. We get emails everyday from people that start the diet and lose precious pounds and end up feeling underweight and fatigued.

    This problem happens all the time, but don’t worry – it is fixable. But it does take some concentrated hard work. Let’s start with what’s going on, there are a number of things that contribute to weight loss both before and during SCD. The three main problems are:

    ==> Malabsorption of foods you eat (not absorbing the proper nutrients/calories)
    ==> Not eating enough calories
    ==> The macronutrient make up of your diet (ratio of carbs, fats and proteins)

    You are already taking the proper steps to correct malabsorption by starting the Specific Carbohydrate Diet and improving your digestion, so nice work there.

    (Hint: If you’re stool quality and consistency improves, that means your absorption of nutrients is also improving)

    Not getting enough calories can be a real problem for people doing SCD. We’ve talked about it several times but eating natural unprocessed foods can be a big change from what you’re used to. Over the years, your stomach has been involuntarily trained to accept a certain amount of food, and while it’s at the correct size for your previous diet, the rules have changed now that you’re eating right on SCD.

    Step 1: Not getting enough calories:

    The best way we’ve found to make sure you getting the calories you need to maintain or gain weight is to use For more info on exactly how to do this please see page 48 in our book. Its’ the number one thing you can do right now to start gaining weight back. Sign up for a free account now and start recording what you eat – it’s the only way to know if you’re actually eating enough NOT to lose weight.

    Step 2: The macronutrient ratio’s

    The last part of this equation is the macronutrient breakdown of what you are eating. Did you know that it is almost impossible to gain weight eating only protein? Keeping your carbs, fats and proteins in proper ratios will help make sure that the extra calories your eating contribute directly to gaining weight.

    It is worth noting that these are probably different than what your used to, but you should strive to keep fats as the largest portion of your diet, followed by protein and then carbohydrates. If you are not sure what your current ratios are don’t worry -Fitday shows you! It calculates them automatically everyday for you!

    What’s the take home point about ratio’s? Eat more good fats (like coconut oil, olive oil, and avocado) and keep carbs in moderation (like fruit and honey). If eating more fats sounds scary because they “give you trouble” then go back to page 33 of the “25 Ways to Hack the SCD Lifestyle” book to read more about how important digestive enzymes are.

  3. A disclaimer: We have not used the fitday program – I just thought some issues addressed in the email were worth some thought and consideration. Calorie intake and absorbtion are constant battles on this diet. I don’t like that they try to sell you something on the website but I always try to tell myself that doesn’t mean that I can’t learn something as calorie increase is something we are investigating now.

  4. Happy Birthday Austin!! You are going to be FINE!! Jennifer, I KNOW how you feel, because Cameron has been hospitalized twice for extended periods of time. I don’t know if you live in metro Atlanta, but if you do, I can assure you that the nurses on the 4th floor of CHCOA – Scottish Rite Hospital are THE BEST!!!! They will take great care of him, and Hillery (the IBD counselor) is AMAZING!!!! Cameron had to be fed intravaneously, and he even called it milkshake and Mountain Dew because of how it looked! I have only tried the banana bread that Paige shared with us and we all love it. Also, I haven’t tried it yet, but there’s a recipe for Creamy Vanilla Frosting and Orange Cake in Lucy’s Kitchen Cookbook. If you want them, let me know and I will send to you. Be blessed!!
