Thumbprint Cookies

This is a recipe I kind of made up myself to make something Justin used to like to eat.  I found a recipe for “Christmas Cookies” and make this recipe, then press my thumb in the middle to make a hole and put a dab of jam from digestivewellness.com in the middle and cook.  He gobbled these up fast!

Christmas Cookies

3 cups almond flour

1/4 cup honey

1/2 cup applesauce

2 tsp. baking soda

1/4 tsp. salt

1 tsp. vanilla

1/2 tsp. ginger

3/4 tsp. cinnamon

1/2 tsp. nutmeg

Preheat oven to 300 degrees.  Mix all ingredients and form into balls.  Place on parchment paper and bake for 10-15 minutes until lightly brown.
