Egg & Peanut Allergies On The SCD Diet!?!

One of our new moms, Jody, is starting the diet for her daughter. Her daughter has an egg allergy AND a peanut allergy! Is there another mom out there doing the SCD Diet for their child with these restrictions? Or does anyone have any ideas for Jody? She is looking at coconut flour recipes, but most of them ask for eggs.
Having an egg allergy, Jody would also like some breakfast ideas.

  1. My son Jack used to have an egg sensitivity. We used to use the egg replacer (sold at WholeFoods). However, I don’t know what’s in it as it has been quite a few years and prior to SCD. I would experiment with other ways of replacing eggs …
    1 egg = 1-1/2 tablespoons baking powder + 1-1/2 tablespoons warm water + 1-1/2 tablespoons oil (use: leavening)
    1 egg = 1-1/2 tablespoons baking powder + 1 tablespoon warm water + 1 tablespoon apple cider vinegar (use: leavening)
    1 egg = 2 teaspoons baking soda + 2 tablespoons warm water (use: leavening) –
    Any recipe recipe w coconut flour required lots of eggs because of how dense the flour is. So I would experiment w a couple of options. I have used the first one.
    For breakfast my daughter loved yogurt with honey and cut apples or strawberries.
