HELP!!! I want cookies!!!

So I’m on week 4 for myself following the SCD Diet. I must say Justin has enjoyed this! He was laughing tonight when I told him how hard it was to make cookies for his brother and sister and not get to lick the bowl or have one of them! He surprised me with one of his favorite smoothies tonight and we sat and drank them and talked about some of the foods we liked best and what we might want to try over the next couple of weeks. I wish I had done this sooner.
I have to share with you my progress. I wanted to see for myself how great the SCD Diet is. I believe I mentioned I have had some intestinal issues myself over the last year and a half, actually I think it will be two years this summer. I do not have insurance so I’ve been self medicating myself over the counter for almost two years now. If I missed a dosage more than two days my symptoms came back. I quit my medicine when I started the diet. I have had none of the symptoms since I started! I have felt so much better off of the sugars and starches, etc. I’m really not sure which food I’m going without that’s making me feel so much better. But so far my experience is just making me a stronger believer in the SCD Diet!
I really do need your help!!! I’ve been such a sweets person! I have been trying to make sure there are cookies/cake baked in the kitchen so if I do have the urge to eat something sweet I have something to grab quick. This has helped me stay on track. The cookies I baked Sunday are not doing it for me. We all have come across some not so good recipes. I would love your favorite cookies recipe! You can take a good picture of the recipe and mail it to me if you don’t have time to type it up. I will share it with everyone! And cookies are a great snack for the summer. Something easy for the kids to grab for a quick snack. They are great to stick on the freezer to pop out on short notice. Come on! Send us your favorite sweet recipe, or better yet, your favorite recipeS! Share them all!

  1. Our favorite cookies….. Soft and chewy….
    4 cups of almond flour
    1/3 cup melted butter
    1/4 tsp baking soda
    1/4 tsp salt
    1/2-1 tsp SCD-legal vanilla
    1/2 cup honey (slightly overflow)
    2 eggs

    —————- We do Not use these three optional ingredients—————
    1/2 cup raisins
    1/2 cup unsweetened coconut flakes
    1 heaping tablespoon of natural peanut butter
    The raisons, coconut, and peanut butter are optional. Another option is 1/2 cup of pecan pieces. Most of these ingredients can be modified to taste and consistency, for example the honey and the butter.
    Pre-heat oven at 350 F degrees (180 C).
    Mix all ingredients and mix by hand or with electric mixer.
    The mixture will not grow or spread while in the oven. They will come out the same shape you put them in so I flatten the cookies to my desire thickness with a spoon as I placethem in the cookie sheet by rotating and applying presure on the dough.
    Cook for 10-15 minutes. You will know they are done when the dough is no longer glossy or looks wet. They will be soft… Dont over cook, They will become hard.

    We have also made a large cookie cake with it on a pizza pie. It was great!
